Egg to Plate Traceability
Our fish are hand-raised from egg by our own team and cared for around the clock 365 days a year. We can trace and date your fish back to the exact broodstock that it originates from, when it left our hatchery, and how long it spent growing at our marine site. When you know your farmer, you know your fish.
Our black cod /sablefish is a stand-out dish when used raw in sushi and sashimi due to its high quality from a careful and controlled harvest, and its particularly high fat content which gives a decadent mouth feel.
No Jelly Meat
30% of wild sablefish reveal soft texture (jelly meat) issues once cooked. Golden Eagle Sablefish has zero jelly meat issues due to being raised in exceptionally deep and well flushed waters in Kyuquot Sound.
